Glyngøre Limfjord A/S
Marinated herrings (sild) from Glyngøre are available at most supermarkets, and if you are so lucky as to be invited to lunch at the palace, you will most likely find them on the table there as well. Glyngøre are purveyors to Her Majesty. You can get many different types of marinated herrings: in Madeira-wine, curried herrings or perhaps best of all the old-fashioned ones: these are matured in brine in oak-barrels for at least 6 months. This process allows the fish to "breathe". The quality of the herrings differ as to where and when they are caught, so a lot of work goes into creating a product of consistent quality. Yes, all herrings are raw - apart from the maturing process! Yummy!
